Buck's Sweet 'n' Spicy Chicken

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 2 tablespoons reduced-sodium soy sauce
  • 2 garlic cloves, minced
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • Lime wedges (optional)

Instructions:

  • Marinate the Chicken: In a small bowl, whisk the first seven ingredients until blended. Pour 1/2 cup marinade into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate for 2 hours. Cover and refrigerate the remaining marinade.
  • Grill the Chicken: Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 165°F. Baste occasionally with reserved marinade during the last 4 minutes of cooking. If desired, serve with lime wedges.
