Buck's Homemade Chicken and Dumplings

Ingredients:

  • 2 cups cooked chicken, shredded
  • 6 cups chicken broth
  • 2 cups all-purpose flour
  • 1 cup milk
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1 tablespoon baking powder
  • 1 teaspoon Bald Buck Seasoning
  • 1/2 teaspoon black pepper1/2 teaspoon dried thyme1/2 teaspoon dried parsley

Instructions:

  • In a large pot, melt the butter over medium heat. Add the onions, garlic, carrots, and celery, cooking until the vegetables are tender, about 5-7 minutes.
  • Pour in the chicken broth and bring to a simmer. Stir in the shredded chicken, Bald Buck Seasoning, pepper, thyme, and parsley. Let the mixture simmer while you prepare the dumplings.
  • In a large bowl, mix the flour, baking powder, and 1 teaspoon of Bald Buck Seasoning. Stir in the milk until just combined to form a dough.
  • Drop spoonfuls of the dough into the simmering broth, making sure they are evenly spaced. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.
  • Optional: For a thicker soup, mix 2 tablespoons of flour with 1/4 cup of cold water until smooth. Stir this mixture into the broth before adding the dumplings.
  • Let the chicken and dumplings cool slightly before serving to enhance the flavors.
