Ingredients
- 6 lb Whole Chicken
- 2 Cinnamon Sticks
- 1 Piece Fresh Ginger
- 4 tbsp Butter
- 1 Orange, Sliced
- 1 Red Onion, Sliced
- 1 Onion, Sliced
- 5 Cloves Garlic
- 3 Sprigs Thyme
- Bald Buck Seasoning, to taste
- Pepper, to taste
- Zest of 1 Orange
Instructions
- Preheat Grill: Set the temperature to 375℉ and preheat with the lid closed for 15 minutes.
- Prepare Chicken: Rinse the chicken under cold water and place it on a sheet pan.
- Make Spice Butter: Coarsely crush the cinnamon sticks and ginger. Mix them with half the butter. Spread this mixture under the chicken's skin.
- Stuff Chicken: Slice one orange and stuff it into the chicken cavity along with the red onion, white onion, garlic cloves, and thyme.
- Season Chicken: Rub the outside of the chicken with the remaining butter. Season with Bald Buck Seasoning, pepper, and orange zest.
- Roast Chicken: Place the chicken directly on the grill grate. Roast at 375℉ for 1 to 1-1/2 hours, or until the internal temperature reaches 160℉.
- Rest and Serve: Allow the chicken to rest for 15 minutes before carving.
