- 6 Bone-In, Skin-On Chicken Thighs
- Bald Buck Seasoning, to taste
- Freshly Ground Black Pepper, to taste
Instructions
- Preheat Grill: Set the temperature to 350℉ and preheat with the lid closed for 15 minutes.
- Prepare Chicken Thighs: Trim any excess fat and skin from the chicken thighs. Season lightly with salt and pepper, then generously with Bald Buck Seasoning.
- Grill Chicken: Insert a probe into the thickest part of a chicken thigh, avoiding the bone. Place the chicken thighs directly on the grill grates, close the lid, and cook until the internal temperature reaches 180°F (about 35 minutes). Note: Chicken is cooked through at 165°F, but the texture improves at 180°F.
- Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes before serving.
